Usually the fish we get from the supermarket comes sans skin, but the fishmonger just cuts it off the head and descales it. So tonight I try for creating a crispy skin for the first time.

Although I went slightly overboard with the crisping, it certainly bears a second go and even the ana ate all of her skin. The house now stinks of fish though...
